花椒(Zanthoxylum bungeanum Maxim.),是芸香科、花椒属落叶小乔木多年生植物。位列调料“十三香”之首,素有“调味之王”的美誉。具高茎,枝有短刺,叶为小叶片,叶片对生,无柄。花序顶生或侧枝顶生;花被片黄绿色,形状及大小大致相同;雌花很少有发育雄蕊。
