I know that you eventually have to give the key back in order to finish the quest, but I was wondering if there was any possible way of keeping it, like killing or pickpocketing the person who takes it or do you just have to hold off on completing the quest in order to keep it.

If you add the Skeleton Key to your inventory, you'll also need to add the "Skeleton Key" perk to make it work, as I recall. Oddplume 10 years ago #4 The Skeleton key doesn't require an additional perk, but without Unbreakable it will "break" on you if you fail to find the spot in the lock.
