Do as Brian T suggests (above), decide what type of carving you want to do first. Edit: I see you have answered his suggestion. Buy a #1 chip carving knife.

In general (got that?), knives meant for wood carving are about 12 degrees total included bevel. See what kinds of shaving you get. When you have to push harder, when the shavings are ragged or streaked = dull, time to hone, maybe every 20-30 minutes of serious carving. Gouges normally get sharpened and honed at 20 degrees.
