It’s a fried eggplant type of night. 🍆🌱I thought I shared this months ago and was looking for it to reference today because I’m making it tonight for dinner. This time I’m using Chinese Eggplants instead of these huge ones. It’s week 3 of my cleanse so I’ll be eating a lot more vegetables in my dinner and lunch meals.
